Kitchen Elves. That’s what I’ve come up with.  Before you call me a tree nut, let’s look at the facts.

  1. We all know that even the most amazing restaurants  in the world have off nights or days.
  2. It’s a given that all restaurants (even the best of the best) have at least one thing on the menu that leaves something to be desired. Hard bread, consistently overcooked house chips, freaky little hush puppies, yellow/floppy catfish, or mushy beans – they have that one thing that, when the server asks if she can bring you some, you’re like, “What in the world did I ever do to you?!“
  3. The phrase “only human” is used interchangeably in our world to remind ourselves and others that no one… or human… is perfect. And they aren’t.

But elves are.

We visit Pennyrile Forest State Resort Park regularly.  Michael loves their golf course (especially the newer “back nine”), the amateur photographer in me loves every inch of the place, and we both love the Clifty Falls Restaurant in their beautiful and cozy lodge.

There are some restaurants (including the ones in the Kentucky State Park System) where you know it’s either “safe” or “risky” to eat off the buffet. It’s either “safe” or “risky” to eat off the menu, and it’s either “safe” or “risky” to eat at a particular time of day.

At Clifty Falls, you’re as safe as a baby in its overprotective mother’s arms either way you choose to go, any time you choose to go.  Even their salad bar is better than most. The real clincher? Their dressings are good. It’s really hard to get good French dressing at salad bars. It’s usually pumpkin orange and thisclose to disgusting. The dressing available at Clifty Falls is fantastic. Their salad bar vegetables are always especially bright, colorful, and obviously as fresh as fresh gets.  They also give you more options than a lot of places.  More options. Better options. Even their French dressing is delicious.

Elves.

When we come off the golf course, we’re exhausted from an afternoon in the sun. Well, he’s exhausted – riding, sipping tea and taking pictures isn’t too taxing, so I’ve never been exhausted… I just act like I am. The Soup and Salad bar is usually the way we go if it’s around lunch time.  HOWEVER, I do often order a fried catfish sandwich with the salad bar simply because I believe this is the best fried catfish sandwich you can get anywhere.  That’s right – ANYWHERE.

Whatever the secrets are to making fried catfish deliciously perfect, Clifty Falls knows each one by heart. In fact, I suspect they wrote the secret manual.

If only every other restaurant would read it!

Take a look at the picture at the top.  See the big, beautiful piece of fried catfish? There’s more flavor in their fried catfish than I could describe to you if I were to stay at this keyboard for 22 hours straight. And it’s so big!  Each and every time, I’m blown away by the size of their catfish fillets.  A lot of places – when making a fried catfish sandwich – only do it halfheartedly.  They seem to think, “Pfft, it’s just a sandwich. We’ll just throw on one of our puniest pieces of catfish and… whatever we do… let’s not cook it well. Let’s make it mushy. Yeah, that’s the way to go.”

Then they’ll throw the poor mushy little guy on a couple of pieces of hard, stale bread, throw a single wilted little sliver of what used to be lettuce on it and send it out and think, “Job well done.”

This might be a good time to point out that I am not affiliated with Pennyrile Forest State Park in any way at all.  I’ve never met their kitchen elves and am not related to any of them. If you don’t believe me, check my ears. Why do I serve up this little disclaimer? Because an already raving review is about to hit its raving peak and I want you to know it all comes from an unbiased heart.

Each time I’ve eaten at Pennyrile State Park’s Clifty Falls restaurant, I’ve gotten the same impression: Everything they make (from fried cornbread to desserts and everything in between) seems to be done just as they would prepare it for their own family.  As a wife and  mother, I KNOW all the special care that goes into cooking for your family. I always want everything to be as perfect for them as the love I have for them is.  I go out of my way to make sure everything is as beautiful and delicious as it possibly can be because, when I’m baking or cooking – this cast of characters isn’t in the back of my mind – they’re in the front of my mind.

Each time I’ve eaten at Clifty Falls, I’ve gotten the same impression. They seem to approach their cooking and baking the same way. Everything tastes as though they were making it for their own spouses, daughters, sons, moms, dads, aunts, uncles…  You can taste it in every bite.

If you’re thinking that this is kind of a rare thing, you’re exactly right.  It’s very rare.

Like elves.

Lunch – 11:00am to 3:00pm
Dinner – 4:00pm to 8:00pm (Sunday thru Thursday)
Dinner – 4:00pm to 9:00pm (Friday and Saturday)

Pennyrile Forest State Park

Michael and I spent Sunday at one of our favorite Kentucky State Parks – Pennyrile Forest State Resort Park. This one seriously breathtakingly beautiful area of Kentucky.  The lush, gorgeous Pennyrile Forest never ceases to amaze me. There are so many different fascinating trees, you’ll find yourself as mesmerized by them as you are the lovely lake.

If you read this Kentucky blog very often, you already know what a tree hugger I am, so you can imagine how much I love Pennyrile Forest. It’s Heaven on earth as far as I’m concerned.

Michael golfed, we drove around and took pictures (lots and lots of pictures), and we ate lunch in the restaurant’s lodge. If this isn’t the best restaurant in the entire state park system, it ties for the absolute best. Each food we’ve ever eaten here has been fantastic.  The fried catfish? It IS the best in the state park system. I’m not sure why, but the people at Pennyrile KNOW their catfish and I love them muchly for that.

I’ll add more pictures tomorrow. At the moment, supper awaits to be cooked. Manicotti just refuses to cook itself.

Flowers at Pennyrile Forest State Resort Park

Great attention and care goes into everything at Pennyrile Forest State Park and it shows. From the spotless dining room, lodge, restrooms, and grounds, it’s obvious that everyone who works at this park has a great deal of pride in the park.  Again, it shows.

The flowers shown here are just some of the gorgeous flowers around the lodge at Pennyrile. The lodge, itself, is like something out of a fairy tale – a picture perfect cottage in the middle of a lush forest. It’s like a wonderful little escape from reality and I highly recommend making the trip as often as possible.

A Perfect Afternoon at Pennyrile Forest State Park

Pennyrile Forest State Resort Park

Michael and I spent Sunday afternoon at one of our favorite places in Kentucky, Pennyrile Forest State Resort Park in Dawson Springs. This quiet, peaceful, and uncommonly beautiful beautiful state park never ceases to amaze me. Seriously, each time we go, I’m taken aback by its beauty and charm.

You’ve probably guessed by now that I’m someone who loves nature like it’s her job. I’ve been that way for as long as I can remember. Put me in the middle of the great outdoors and I’m like a kid on Christmas morning.

I absolutely live for visiting and photographing parks, state parks, zoos, public gardens, forests, lakes, etc. Over the years, I’ve noticed with these places that the one essential KEY to showcasing nature’s beauty is this: Don’t get in the way. Just let nature’s beauty shine through.

The Kentucky State Parks are masters at doing this very thing, and nobody does it any better than Pennyrile Forest State Park. Everywhere you look you’ll see nature showing off – from the thick beautiful forest to the beautiful lake, this is one very special park.

We walked around the park, enjoying the peace and quiet for about an hour. We watched squirrels, birds, and even a chubby ground hog, behind the lodge, and decided that they were all enjoying the day as much as we were.

Frankly, I think it’d be impossible NOT to enjoy a day at Pennyrile Forest State Park.

Clifty Falls Soup and Salad Buffet

After working up an appetite, we went to the Clifty Falls Restaurant (downstairs in the beautiful lodge). We were trying to decide what to order, then our VERY warm and friendly server told us the soup and salad buffet was only $6.99. She said the soups of the day were brown bean and chicken vegetable. We both thought that sounded too good to pass up.

After we sat down with our soup and salad, our server came back by and told us to help ourselves to the bread on the buffet. She didn’t have to tell me twice! When I saw fried cornbread, I loaded up a plate and returned to the table. Michael did all but give me a standing ovation. Fried cornbread is one of his favorite things in the world. The soup was already outstanding, but the fried cornbread just took it to a whole Heavenly new place.

It was so cool of our server to point the bread out to us – I appreciated it a lot.

She was, truth be told, a very sweet person. Over the course of our meal, I noticed several times how extra sweet she was to some of her elderly guests at a nearby table. She was very sweet, very respectful, and treated each one as though they were a beloved grandparent. At one point an older lady stood up and started to make her way toward the buffet. Our server came rushing over and asked if there was anything in particular she could get for her. The little (and adorable!) lady said, “I wanted another roll…” and our server told her she’d be more than glad to get one for her.

It just struck me as a very kind thing to do and I thought how lucky Pennyrile Forest State Park is to have a woman like this on their staff. She reflects beautifully on the entire park. That’s the kind of southern hospitality we Kentuckians are known for and I always, always, always love to see it in action.

Fried Cornbread at Clifty Falls Restaurant, Pennyrile Forest State Resort Park

The cornbread was excellent, as was the brown bean soup. They were a match made in southern Heaven.  Pennyrile always has a wonderful salad bar, too, and an above par lunch and dinner buffet. They do, of course, have a menu you can order from if you prefer that over the buffet. The fried catfish is fantastic, as is the Kentucky Hot Brown.

After enjoying our wonderful lunch, I visited the gift shop while Michael paid for our lunch. It’s a wonderful maneuver I’ve perfected over the years… “Honey, you pay while I go shop…”  I love our Kentucky State Parks greatly, so I’m all for supporting them every chance I get – luckily the gift shops are always filled with wonderful things I NEED in the worst possible way.

On this trip, one of the things I grabbed was a jar of Plum Jam.  It’s tough to find Plum jam and the state park gift shops are some of the only places I’m ever to find this personal favorite. I used it this afternoon to make some delicious Thumbprint Cookies.  My daughters and husband didn’t seem to mind that one bit.

We sat in the beautiful lodge for a while enjoying the peace and quiet, then went outside and walked around the lodge one last time before heading home. The landscaping, flowers, plants, and bird feeding stations were gorgeous, as always Pennyrile Forest State Resort Park is just totally and completely on their game, and these pictures don’t even begin to do the park justice.

I hope you’ll visit Pennyrile Forest State Park as soon as you possibly can. Whether you make it a day trip or an overnight stay (in their beautiful lodge rooms or cottages), I know Pennyrile Forest State Park will blow you away.  The friendly staff, wonderful Clifty Falls Restaurant, beautiful lodge, and breathtaking scenery will make this one of your favorite getaways too.

Photography Weekend April 19-21, 2013 At Pennyrile Forest State Resort Park

Pennyrile Forest State Resort Park

Some things just seem to go together –  like buttermilk biscuits and butter, chocolate chip cookies and milk, pancakes and syrup (yes, as a matter of fact, I am hungry, why do you ask?).  Kentucky State Parks and cameras are another match made in Heaven. Visiting one of these parks without your camera would be like approaching a cheesecake without a fork.

Another food analogy. Sigh. This girl has got to get something to eat.

One of our state’s most scenic  parks, Pennyrile Forest State Resort Park, will host its Photography Weekend April 19-21, 2013 and I can’t imagine a more beautiful place to work magic with a camera.  God’s done all the hard work – all we have to do is point and click!

The contest boundaries are the boundaries of the park and Pennyrile State Forest. Photographs may be taken anywhere within the state park and state forest. The categories of the contest vary, but they will always have a nature emphasis such as wildlife, landscape and water.

Participants turn in one photo per category and should bring their own camera. Registration is $35. Register at least one week before the event and get a $5 discount. Children 16 and under pay just $10. The park offers a 10 percent discount on lodging available. New this year: Participants can register online at: https://secure.kentucky.gov/formservices/Parks/photography

Contestants may begin taking photos as soon as they check in on Friday.  Check-in begins at 2 p.m. Participants will be divided into three divisions: master, intermediate, and point-and-shoot.  Participants in the master division have sold their works before; those in the intermediate division have a SLR camera, but are hobby photographers; and point-and-shoot participants use cameras that do not have detachable lenses. Children may compete in any of the three divisions.
This year’s speaker and judge will be Lori Kincaid. She is an internationally recognized nature photographer specializing in landscapes and flora of the Southern Appalachians. Her photography has been exhibited in national and regional venues, including the Smithsonian National Museum of Natural History and the North Carolina Museum of Natural Sciences, and featured in regional, national, and international publications and events.

Evening programs will be held at 8 p.m. on both Friday and Saturday. The Friday night program will be an introduction to the competition. The Saturday night program will be Landscape and Close-up Photography: From Mastering the Craft to Making the Art by Lori Kincaid. The weekend will end at approximately noon Sunday after the awards ceremony and slide show of the weekend’s photographs.

The resort is 20 miles northwest of Hopkinsville, on KY 109 North. From the Western Kentucky Parkway, exit at Dawson Springs and take KY 109 South.

Named for the tiny pennyroyal plant found in the woodlands surrounding this resort, Pennyrile Forest is the perfect back-to-nature hideaway. The rustic wood and stone Pennyrile Lodge, with 24 rooms, sits serenely on a high cliff overlooking Pennyrile Lake. Open year-round, the park has 12 cottages located in the wooded lodge area and on the shores of Pennyrile Lake. The restaurant seats 200, including a private dining room for up to 80. The campground has facilities for tent, RV, and horse campers. The campground features utility hookups, a dump station, and one central service building with showers, restrooms and a laundry. The park also has an 18-hole golf course with a pro shop, riding carts, pull carts and rental clubs. The course is open year-round, weather permitting. The park also offers hiking trails, fishing and boating, mini-golf, basketball and tennis.
