One of the coolest mini family vacations my family and I ever took was to Greenbo Lake State Resort Park. The entire area was absolutely beautiful (breathtakingly peaceful) and the people couldn’t have been any friendlier. If this sounds like something you’d be interested in – who wouldn’t be?! – you might want to plan your visit according to the information below. After all, great scenic beauty, combined with Autumn colors is outstanding, but when you throw classic French cuisine in there, it’s beyond outstanding!

Greenbo Lake State Resort Park’s Anglers’ Cove Restaurant will be featuring its International Classic Cuisine French Night on Nov. 5.

The menu will include chicken cordon bleu, pork tenderloin Diane, beef Burgundy, French veal chops, French-style green beans, lyonnaise potatoes, quiche Lorraine, French leek pie, zucchini de Provence, catfish, French soups and salads, assorted desserts, pudding, cobbler and brioche served at the table.

Served from 5 to 9 p.m., the meal costs $14.99 for adults or $6.99 for children 12 and under. Drink, tax and tip not included.

The International Classic Dinner on Dec. 3 will feature Mexican Night.

The park features the Jesse Stuart Lodge with 36 rooms, a convention center and Anglers’ Cove Restaurant. The park also has a 225-acre lake for boating and fishing, tennis courts, and 25 miles of multi-use trails for hiking, biking and horseback riding. The campground is open April 1 through Oct. 31. Greenbo Amphitheatre features musical concerts and plays during the summer and fall.

Greenbo Lake To Host International Classic Cuisine Italian Night on Feb. 5

Beautiful Kentucky scenery, outstanding food… just how can this be anything but paradise?!?!

Anglers’ Cove Restaurant at Greenbo Lake State Resort Park will feature its first International Classic Cuisine Italian Night on Feb. 5.

The menu will include baked spaghetti, Chicken Alfredo, chicken Parmesan, baked vegetarian lasagna, catfish, Italian green beans with almonds, asparagus with red peppers, Sicilian vegetable blend, rice pilaf, peas with pearl onions, smashed redskin potatoes and gravy, homemade pizza (for the kids), a salad bar, soup, garlic bread and cornbread, assorted Italian desserts, pudding and cobbler.

The Italian feast will be served from 5-8 p.m. The cost for adults is $14.99 and children can eat for $6.99. Drink, tax and tip not included. In March, the park will feature Irish Night at the Anglers’ Cove Restaurant.

Jesse Stuart Weekend is Sept. 24-25 at Greenbo Lake

Greenbo Lake State Resort Park will hold its annual weekend honoring Kentucky writer Jesse Stuart on Sept. 24-25.

The weekend is dedicated to the works and memory of the former Kentucky poet laureate, who was born in Greenup County, worked as an educator and became known for his poems, short stories and novels. He often used education and his Greenup County surroundings for themes in his stories.

The weekend begins on Friday, Sept. 24, with an afternoon hike to the Jesse Stuart Nature Preserve. There will also be talks about Stuart and on Saturday a tour of the Jesse Stuart Foundation in Ashland, a visit to W Hollow, Stuart’s home, and book appraisals.

The weekend will also feature “The Needles Eye,” a dramatic production with music taken from Stuart’s book about his experience as an educator “The Thread That Runs So True.” Show times are Saturday, Sept.  25, at 7 p.m., and Sunday, Sept. 26, at 2:30 p.m.  Both shows will be at the Greenbo Lake Amphitheatre.  Admission is $5 for adults, $3 for seniors and students. Preschoolers are free. Bring your lawn chairs or blankets with you.
